Mon-Fri Seasonal Recipes + Grocery Shopping List: January Week 2
Braised Beef, Creamy Lemon Chicken, Pomegranate Meatballs + Cozy Winter Dinners...
We’ve been slowly unboxing everything, and going through each space has been eye-opening. I cleared so much from my closet, and it made me realize I didn’t need a bigger closet, I just needed fewer things. I did the Marie Kondo method with my clothes, asking myself: do I actually wear this, does it have real meaning to me, and does it work for my life right now? I’m in mom mode most of the day so I wear comfortable clothes and flats, but I like to have a few dressier looks for a night out. I don’t need a ton. Just key pieces in good materials that fit well. If you’ve been wanting to do a closet purge, a move is a great time to do it since everything’s already out anyway. But even if you’re not moving, just going through things item by item can give you that same fresh feeling. And the payoff is being able to actually find things instead of shoving stuff in to make it fit.
I’ve also been enjoying getting to know our new kitchen. The oven actually seems true to temp and cook time, which has made cooking a little easier. I’m excited to experiment with things I haven’t tried yet. Including making cheese! (I’ll report back.)
This week was pretty warm here, but next week drops into the 40s. So I’m leaning into warming, cozy meals. We’ve got a braised beef and root vegetable stew with orange and thyme, creamy lemon chicken with spinach and potatoes, pomegranate-glazed meatballs with roasted cauliflower, honey-roasted salmon with fennel and orange, and a turkey, sweet potato, and white bean skillet. All protein-focused and using what’s in season right now. None of them take more than 30 minutes to prep. As always, these are written step by step to make cooking at home easy, and the base recipes work for the whole family with ways to add heat at the end for those who want it, full menu and grocery list below:
