This week’s recipes are all about easy, cozy meals with plenty of fresh summer flavor. I kept things simple but satisfying, perfect for weeknights when you don’t want to spend hours in the kitchen. There’s a mix of comforting classics, like creamy chicken soup and pot pie (Poppy’s absolute favorite), plus lighter options like Mediterranean salmon and a bright coconut lentil soup. Everything uses produce that’s in season right now, so it’ll taste extra fresh.
I tend not to follow the days exactly that’s listed out, sometimes I’ll make our Thursday dinner on a Tuesday or vice versa depending on what everyone is in the mood for, but it’s nice knowing I already have all the ingredients on hand and don’t have to make a trip to the store because of lack of planning.
The full grocery list (at the bottom) is organized by type to make the farmer’s market and store runs more efficient. I love going to the farmer’s market on Saturday morning and whatever produce I can’t find there, I get from Whole Foods along with the rest of my list (the same day fresh delivery to my front door), so it makes shopping for all the ingredients so easy from my phone!
