We had the best tortilla chicken soup at our neighbor’s house last week, and I knew I had to make my own version of it, especially because it’s Anthony’s favorite soup! Slow cooker meals feel perfect for a cold week in December, and the temperatures are supposed to drop quite a bit next week, so this is exactly the kind of cozy cooking I want right now.

Monday: Slow Cooker Fire Roasted Chicken Tortilla Soup
Prep Time: 15 min Cook Time: 4 to 6 hours Total Time: 4 hr 15 min Serves: 6
Before You Start
Equipment: 6 quart slow cooker, cutting board, knife.
Dice 1 large onion, mince 4 garlic cloves, peel and dice 2 cups carrots.
Drain and rinse 1 can black beans.
Set out toppings so serving is easy.
