Last week Elliott’s favorite was the Creamy Lemon Chicken with Spinach & Potatoes from Tuesday night. Mine was the braised beef (Monday night’s dinner pictured above). The next day I put the leftovers over brown rice with extra orange slices and it was so good, highly recommend if you make it.

We've been busy with the kids' rooms, painting and sourcing pieces. I'll share an update next week with some of what we found. Poppy's room is covered floor to ceiling in floral wallpaper and it came out so nice!

This is where Elliott spilled a small can of paint as he was helping, luckily Anthony was able to scoop most of it up so we didn't lose too much. This weekend I'm planning to make the kids sourdough donuts so I'll post that recipe next week along with a start to finish sourdough guide. I'll also be sharing part four of my Trying to Conceive series.

On the menu this week: a black bean enchilada skillet with ground beef and peppers, creamy Dijon chicken with mushrooms and greens, beef kofta with roasted carrots and yogurt (there’s an optional recipe for homemade pita too), crispy salmon with a pomegranate maple glaze and roasted broccoli, and a beef and tomato stew that tastes even better the next day. Good balance of comfort and freshness, lots of vegetables that are in season right now, and enough variety that dinners don’t start blending together. Everything is written step by step with options to add heat at the table for Anthony and me while keeping it kid friendly. The full recipes and grocery list are below for my Substack family:
