Mon-Fri Seasonal Recipes + Grocery Shopping List #17
Last week Poppy’s favorite meal hands down was the Turkey, Kale & Wild Rice Casserole, I was between that one and the Spinach Beef Pasta Bake (both were so quick and easy and will definitely have to be on the menu again at some point!).
This week is all about getting ready for Thanksgiving (here’s my post about what I’m making for it here), but I still can’t forget about dinner for the days leading up to it. To keep things simple, I’m doing the easiest meals possible. Everything is either slow cooker or one pan so I can put it together in the morning and not think about it again until dinner. I’m skipping a meal for Thursday but have a great recipe to use turkey leftovers for Friday.
I’m using a mix of ground beef and chicken this week, and every recipe is designed to be flavorful, comforting, and filling. These all make great leftovers for lunch the next day too, which is always helpful during a holiday week! I’m keeping the rest of this post for my Substack family. The full post continues below:

Before You Start
Equipment: Large skillet (optional for browning), 6 quart slow cooker, cutting board, knife. I love this slow cooker because I brown the meat in the pot over the stove then transfer it to the warmer, it’s easy to clean too)
