I made this for my daughter’s 4th birthday party and it was a hit! We had a dessert table with actual cake so this watermelon “cake” was part of the light bites area which included a charcuterie board and tomato basil caprese skewers. The fruit cake was not only stunning but the kids LOVED the watermelon slices and I thought it was a pretty way to display summer fruit. I have a ton of mint in my herb garden so this was also a great way to make use of it and it smelled so good!
